Sourdough Apple Pancakes

Great way how to use sourdough discard, refresh your starter or just feed it because you want to have pancakes for breakfast!


Sourdough pancakes

Wet ingredients

  • 50 g sourdough levain/discard*

  • 150 g milk or milk alternative

  • 1 egg

  • 25 g maple syrup

  • 1 roughly grated apple

Dry ingredients

  • 120 g flour (I used a mix of kamut and spelt)

  • 1 tsp cinnamon

  • pinch of salt

  • ¼ tsp baking soda

  • 1 tsp baking powder made with cream of tartar (without phosphate)

Instructions


  1. Mix wet ingredients first, then add the apple and stir again.

  2. Add all dry ingredients to create a thicker batter.

  3. Cook on a lightly oiled pan (I used coconut oil) over medium heat. And enjoy!


Notes

*Feel free to use more sourdough starter and substitute some flour and milk with the starter. So if you use an extra 50 g of starter, use 25 g less flour and 25 g less milk.
