Great way how to use sourdough discard, refresh your starter or just feed it because you want to have pancakes for breakfast!
Wet ingredients
50 g sourdough levain/discard*
150 g milk or milk alternative
1 egg
25 g maple syrup
1 roughly grated apple
Dry ingredients
120 g flour (I used a mix of kamut and spelt)
1 tsp cinnamon
pinch of salt
¼ tsp baking soda
1 tsp baking powder made with cream of tartar (without phosphate)
Instructions
Mix wet ingredients first, then add the apple and stir again.
Add all dry ingredients to create a thicker batter.
Cook on a lightly oiled pan (I used coconut oil) over medium heat. And enjoy!
Notes
*Feel free to use more sourdough starter and substitute some flour and milk with the starter. So if you use an extra 50 g of starter, use 25 g less flour and 25 g less milk.
